Komm, gehen wir an Strand!

Doppelgänger

This is my best friend Veronica. The drive to Pismo beach is about an hour and a half from where we live in the desert so one afternoon she texted me "lets go to the beach!" Two hours later we were able to get ready and be there. We went to a psychic and had our palms read, walked around a small farmers market and bought lavender sugar scrub, ate fish and chips, went in a photobooth, bought soy chai lattes, and laid out in the sand.

Red Miso Stir Fry




Stir fry:
1 pkg yam noodles
2tbs Coconut oil
1C extra firm tofu
1/2C cabbage
1/2C broccoli
1/2c yellow squash
1/4C red onions
1 large garlic clove
Red Miso Sauce:
1tbs grated ginger
2tbs red miso
2tbs rice vinegar
2tbs honey
1tbs soy sauce
1tbsp sesame oil
1 tbs lemon grass



Directions: Its pretty simple. Cut everything up, including the noodles(5 calories per serving WTF!), they're long and clump together. Rinse off the noodles then boil so they're a little cooked first, they start out pretty firm and rubbery (don't be turned off, they're good!). Set aside. Then heat up a big pan with the coconut oil and put the vegetables (save garlic and onions until the last minute) and tofu in until they are cooked and the tofu has brown edges. Mix the sauce ingredients together and add to the cooked vegetables along with the noodles and let it caramelize for about 30 seconds. You can put some red pepper flakes or fresh basil on top, I always like non-cooked herbs with hot
food like this, its refreshing.

Leaning Tower of Hummus

The farmers market nearest to me has my favorite middle eastern stand called "BaBa Foods". Last weekend we got a little carried away and bought 3 different kinds of hummus. Avocado & cilantro, red pepper, artichoke & garlic. And got a spicy black bean for free. We also got a container of tabbouleh to eat with it. I dislike tabbouleh alone but when you put it on a sandwich with avocado or scoop it up with hummus on a chip or pita then it's delicious! I'm glad I found a way to eat it that I like because it has parsley(vitamin K,C,A, iron and folate), bulgur (high in protein and fiber) and olive oil(unsaturated fat and antioxidants).

Becoming a Vegetarian "Vegetarier zu werden"


This is a picture of me in Switzerland during my first trip to Europe (they put this card at the table so they knew where to bring the "vegi" food, I thought it was cute), I also went to London, Paris, and Italy. Half a year before this I read the book "Skinny Bitch" and decided to become a vegetarian. I  felt healthier but also felt like I was doing the right thing. At home it was easy but everyone warned me that I might want to make an exception for the 3 weeks I would be touring Europe because there would be nothing for me to eat and I would need energy. Not true! The first few days in London I was a little worried I would get sick if I had to eat any more french fries as a meal but finally one of my friends asked our tour guide to read a menu for us in a cafe in Paris and mentioned that I was a vegetarian. After hearing this he was surprised I didn't tell him before and for the rest of the trip he made sure there was always something for me to eat. Everyone was always very nice and respectful with making me something different and I especially enjoyed a lot of Caprese salads or sandwiches with mozzarella, basil and tomato and the best pasta with simple tomato sauce I have ever had. Actually, a lot of the time the picky eaters on the trip where jealous, especially when I was served potato pancakes instead of the veal. Also every day (or more than once) we would stop and get some gelato (its everywhere!), and eat it while we rested and enjoyed the scenery. I probably had pistachio flavor at least five times and stracciatella(chocolate chip) was good too. It wasn't the most nutritious month of my life but I survived and have many good memories. Two years later I am still a vegetarian, except on special occasions when I go out to sushi with my friends. I know its cheating but I still do a lot better than most people.
